食卓がまだ豊かでなかった頃、〇〇の地に小さな蔵を構え、近隣農家の大豆と地元の藁で納豆を仕込み始めました。近所の家々に量り売りで分けたのが蔵の始まりです。木桶と杉戸は店主が自ら手で組んだもので、今も同じ場所で使われています。In a time when tables were not yet abundant, a small brewery was founded in Your region, brewing with local soybeans and straw. Selling by measure to neighbors was the start of the brewery. The wooden barrel and cedar door — built by hand — are still in their original place.

機械化と発泡スチロール容器の導入を勧める声が相次ぎましたが、「木桶と藁苞でなければ蔵の納豆ではない」と一貫して断ってきました。代わりに石蔵の修繕と保健所基準の衛生管理だけを整え、贈答先からの注文一通ずつに手書きで返信してきました。「説明より、毎朝の所作で語るのが蔵の務めだ」という言葉が、今も帳場に残っています。Offers to mechanize and switch to foam containers were repeatedly declined, with the conviction "without wooden barrels and straw wraps, it is not our brewery's natto." Instead the stone cellar was restored and hygiene standards were met, while every gift order received a handwritten reply. The words still hang in the office: "A brewery speaks through its morning movements, not through words."

毎朝5時、蔵の杉戸を開けるところから一日が始まります。木箱への焼印・のし・配送日指定にも対応しながら、変えないのは朝の所作と藁苞の手仕事です。近年は海外在住のご家族への発送も少しずつ増え、英語表記のしと冷蔵航空便も整えています。Each day begins at 5am, opening the cedar door of the brewery. While offering engraved cedar boxes, noshi, and date selection, what stays unchanged is the morning movement and the straw-wrap craft. In recent years, shipments to family members living overseas have gradually increased, with English noshi labels and chilled air delivery now available.

STEP 01
01 ご注文01 Order
名入れの文字(漢字6字/英字12字)、のしの種類、ご希望の到着日を、注文画面で順にお選びいただきます。Choose engraving (up to 6 Japanese or 12 Latin characters), noshi style, and preferred delivery date at checkout.
STEP 02
02 大豆を蒸す02 Steam Soybeans
前日から地下水に浸した大豆を、翌朝6時から圧力釜で約4時間、芯までやわらかく蒸し上げます。Local soybeans soaked overnight in well water are steamed in a pressure cooker for about four hours from 6am.
STEP 03
03 納豆菌をつける03 Inoculate
蒸し上がった大豆を木桶に移し、蔵に住み続ける納豆菌を霧状にして均一に行き渡らせます。The steamed beans are moved to wooden barrels and inoculated with the brewery's native culture, misted evenly.
STEP 04
04 発酵させる04 Ferment
40度・湿度85%の発酵室で18時間、その後5度の熟成室で1日。蔵人が温度と香りを朝晩確かめます。Fermented at 40°C, 85% humidity for 18 hours, then aged at 5°C for one day. The brewer checks temperature and aroma morning and evening.
STEP 05
05 検品・焼印05 Inspect & Engrave
糸引き・粒の張り・香りを一箱ずつ目視で確認し、杉の木箱に贈り先のお名前を焼印で入れます。Each box is inspected for stretch, grain firmness, and aroma; the recipient's name is then pressed onto the cedar lid.

06 包装・発送06 Wrap & Ship
のし紙を巻き、保冷材を入れたクール便で発送。指定日の午前または午後にお届けします。Wrapped with noshi paper, packed with ice, and shipped chilled to arrive on your specified morning or afternoon.
